Melt opening third location in Independence

Matt Fish, chef and owner of Melt Bar & Grilled, sure isn’t one to spend his time loafing.

By mid-September, he plans to open another Melt, his third, in Independence. The gourmet grilled cheese hub already has restaurants in Lakewood, which opened in 2006, and Cleveland Heights, which opened last year.

The 4,500-square-foot eatery in Independence will be in the new, $4 million Liberty Commons, a 22,000- square-foot strip shopping center at 6700 Rockside Road.

“I chose Independence because it has a good demographic and population base, with well over 200,000 people over a five-mile radius,” said Mr. Fish, chef and owner of Melt. “That location is closer to the Akron market. It’s a good intro. We’re trying to get into Akron in the next two years.”

The restaurant will seat 130, similar in size to the Cleveland Heights eatery but larger than Lakewood.

The interior will mimic the design elements of his other Melts, with a similar dark blue pressed tin ceiling, exposed brick and hardwood floor, and Cleveland-related memorabilia peppering walls and crannies.

The brand is “very comfort-eclectic,” Mr. Fish said.
