Great Moments in Melt History – “Soup is Cozy, Soup is Welcoming, Soup is Comfort Food.”
Soup might be the most underrated food in history. It can be lean and light, or thick and hearty. Vegetarian, as well as meat-based. Served as a side or entrée, and hot or cold. Every culture has a soup, and that makes it comfort food.
Melt Bar and Grilled is known for its gourmet comfort food, so it’s only natural to offer great soup.
“Our approach to soup is a bit different,” says Matt Fish, owner and founder of Melt. “All soups can be classified as ‘comfort food,’ but the soups at Melt are designed to stand alone or compliment our gourmet grilled cheese and enhance the ultimate comfort food experience at Melt. The 4 soups offered at Melt are created from signature recipes each day at our facility and are unique to Melt – they cannot be found anywhere else.”
“Soup has always been part of the Melt Bar and Grilled experience and menu,” says Fish, “and the Roasted Garlic Tomato and the 4 Bean Vegetarian Chili have been on the menu since day one, and the recipe for both is the same too. The Buffalo Chicken Chowder was a very popular soup-of-the-day offering, so in 2015, we decided to add it to our permanent menu.”
The newest member of the Melt soup menu is French Onion Soup. “That is a delicious soup!” says Fish. “The big deal about our French Onion is that we make it vegetarian in-house and can make it 100% vegan. This is a huge deal since vegans have not had the ability to enjoy French Onion Soup since it is traditionally made with beef stock. It was developed to be part of the new Vegan Menu but we loved the recipe so much we decided to add it to the permanent menu. It is a great French Onion Soup recipe that just happens to be vegan.”
In fact, Melt’s Roasted Garlic Tomato, 4 Bean Vegetarian Chili, and French Onion Soup can all be made vegan. “All 3 soups’ core recipes are 100% vegan,” says Fish. “They become non-vegan when the toppings and garnishes are added so these 3 soups can be offered as vegan each day at all Melt locations.”
“I have vivid memories of eating grilled cheese and tomato soup as a kid,” says Fish. “I remember having oyster crackers or Goldfish crackers in my soup, and that’s why Goldfish crackers are included with all soups at Melt today!”
