Great Moments in Melt History – “The Return of the After School Special (The Sandwich, Not the TV Show)”
One of this month’s featured grilled cheese sandwiches, the After School Special, is making a triumphant return after a five-year hiatus.
“Keeping it fresh and fun is what Melt is all about,” says Matt Fish, owner and founder of Melt Bar and Grilled, “And we felt it was time to dig deep into the archives for a few sandwiches we have not offered in a while. The After School Special was last offered for a few months in 2014, and even though it was well received, we didn’t keep it on the menu for very long. We just don’t think it got the love it deserved so we are bringing it back.”
What was the original idea behind the sandwich?
“I remember having plenty of fried bologna sandwiches as a kid,” says Fish, “And I’m not the only one, because a fried bologna sandwich of some kind has always been one of our most requested sandwiches. We originally developed one in 2010 as part of the Melt Bar and Grilled ‘Late Shift Film Series’ and it did very well. We decided to bring it back in 2014 when we had just opened our first Columbus location. Again, it did well, but we had too much going on to give it enough time to come into its own. We are excited to see how it performs in 2019 with 10 locations!”
The After School Special is made with two very distinctive components, ketchup chips and ballpark mustard aioli.
“We didn’t want to use plain old ketchup and mustard on this sandwich,” says Fish. “Instead, we wanted to create items to represent ketchup and mustard but be much more interesting. The sandwich also needed a crunchy texture so the ketchup chips work perfectly.”
“The ballpark mustard aioli is a combo of mayonnaise and Bertman Original Ball Park Mustard, along with a few other ingredients and is just perfect on the sandwich. Why Bertman mustard? Simply put, Bertman Original Ball Park Mustard is the best spicy mustard in town. Well, actually, it’s the best mustard on the planet! When creating an iconic sandwich for Ohio, you need to have an iconic mustard. The only serious choice is Bertman.”
So, as baseball season gets underway, remember that it brings with it the official start of spring and the return of the After School Special.
