Great Moments in Melt History – “Vegan Mac & Cheese.”
It’s a challenge to make vegan cheese that melts and stretches like dairy-based cheese. Needless to say, making a vegan mac & cheese, which is fundamentally based on melty, gooey cheese, was also an enormous challenge.
“We worked on the recipe for about 2 months,” says Matt Fish, owner and founder of Melt Bar and Grilled. “We tweaked it several times to get it just right. The recipe is quite simple and is made very much like our regular mac & cheese recipe: soy milk, vegan cheese and spices. Very simple and very delicious!”
When the Melt Maniacal Macaroni & Cheese menu launched in October, the questions about when a vegan version would be available started immediately.
“The questions started right away,” says Fish. “We heard, ‘when will there be a vegan mac & cheese?’ a lot. And we get it, since Melt is so vegan-friendly. That’s why we worked so hard on the recipe, but waited until it was just right.”

According to Fish, “The most popular are the Classic Cheesy Cheddar, Vegan Chicken Pesto, Vegan Buffalo Chicken & Vegan Chicken Bacon Ranch, and I am a huge fan of the Vegan Eggplant Parma Mac & Cheese.”
The first official preview of Melt’s vegan mac & cheese happened in May at Cleveland VegFest and the response was overwhelmingly positive. “In general,” says Fish, “Melt has always been well received for our vegan offerings and people were really excited to get a taste of the new vegan mac & cheese. Vegan cheese isn’t very common, and a good vegan mac & cheese is even less common. So I’m really happy that people are excited about our version!”
